This bar was inspired by the chocolate classes I teach. Oftentimes the students like the rough ground texture of the chocolate after it’s only been refined for a few minutes. For a more refined taste I refine the chocolate to let most of the volatile aromas evaporate and then add some more nibs back in at the very end for that extra texture and intensity.
Crafted from high-altitude heirloom cacao, this bar offers notes of brownie batter, delicate florals, and honey, punctuated by lightly refined nibs throughout.
Ingredients: organic cocoa beans from Chuncho Peru, organic cane sugar, less than 1% organic cocoa butter.
